A Step Up

I used to pop my popcorn in canola oil. Not anymore! My Girlfriend Kris told me that coconut oil is best, so I tried it. She’s definitely right.


Coconut oil has a crisping quality, she explained to me, so the popped kernels are really crunchy. She claimed they will stay like that for a day or so, but I am not able to confirm that for you since we ate all the popcorn up right away.

Some people get all up in arms about coconut oil, saying it’s bad for you, but I don’t think it is. I’ve done reading on it (Nourishing Traditions by Sally Fallon), and while I can’t spout off the facts and statistics for you because I’m simply horrible at recalling scientific facts, I can tell you that you’ll be just fine if you eat it. According to Fallon, your body will even thank you.

From now on I'll be buying coconut oil by the gallon (via My Girlfriend Kris who orders from some company up North and gets five gallons at a time), not in those little pint jars. And we'll be loving our crunchy popcorn. Crunch. Crunch. Crunch.

    "Ok, so here is the amusing coincidence for me this morning. I sat down at the computer to do a bit of research on Coconut Oil. Thought I'ld first check your blog. I couldn't believe it when I saw your subject. How great is that? I have many questions about it though. There are so many different brands, grades, etc. Just 2 days ago I bought a small jar, 6.39 for 14 oz of Spectrum Naturals expeller pressed Organic Coconut Oil refined for med high heat. Should I open it or should I return it and get unrefined. A friend had given me some info on it about 2 years ago. It's taking me this long to do something about it. Tell me everything you know on the subject."

    My response: I don't know anything about coconut oil. I just do what Kris says to do. So I called her and she said to get unrefined organic. She said the refined stuff doesn't taste like coconut. She says that coconut oil has a very high smoke point. She orders her's (and mine) from Mountain Rose Herbs, but there's lots of places that sell it. Store it at room temperature.

    That's all I know.
